Grilled Chicken Hot Sausage Soup

Grilling your ingredients first makes a rich and flavorful soup!

From Weiss Meats:

  • 1 pound Chicken Hot Sausage (rope)

From Your Grocer:

  • 1 1/2 quarts chicken stock
  • 2 tablespoons olive oil
  • 1 pound tomatoes
  • 1 large red onion
  • 1 small zucchini
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 3 cloves garlic (minced)
  • 1 teaspoon oregano
  • 1 TBS fresh parsley
  • 1/2 pound of bow tie pasta
  • 1 cup fresh, grated Parmesan cheese


  • Cut onion, tomatoes, and peppers into quarters.
  • Split zucchini in half lengthwise.
  • Preheat grill to medium high and grill sausage rope.
  • Remove sausage from grill and cover with foil.
  • Add cut vegetables to the grill and roast until tender and lightly charred, then remove.
  • Heat oil to a large soup pot.
  • Add garlic to the pot.
  • Chop vegetables into bite sized pieces and add to pot.
  • Cut sausages into disks and set aside.
  • When onion is translucent and tender, add sausage pieces and stir.
  • Add spices, beef stock and pasta.
  • Stir and reduce heat to a low simmer.
  • Simmer for 3 - 4 hours, stirring occasionally.
  • Ladle into bowls and top with cheese.
