Weiss' Sausage Stuffed Squash

Weiss' Sausage Stuffed Squash

From Weiss Meats:

  • 1 lb sweet sausage
  • 1 lb hot sausage

From Your Grocer:

  • 3 squash (like acorn squash), halved and seeded
  • 1/2 cup bread crumbs
  • 1 1/2 cups brown sugar
  • 1 cup finely shredded parmesan cheese.
  • 1 package baby portabella mushrooms sliced thin (optional).


  • Preheat your oven to 350 degrees.
  • Fill a baking dish with 1 inch of water.
  • Place the squash halves face-down in the pan and bake until flesh is tender (40-45 minutes).
  • Meanwhile, combine and cook sausage in a large skillet over medium heat, breaking meat into crumbles as it cooks.
  • Slice and add mushrooms if desired.
  • Drain oil from sausage.
  • Move sausage to a large bowl to cool.
  • Mix bread crumbs and 1/2 of the Parmesan cheese in with sausage.
  • Once the squash halves are tender, drain the water.
  • Sprinkle brown sugar into the hollow of each squash half, leaving about 1/4 cup for sprinkling on top.
  • Fill the squash halves with the browned sausage
  • Top with remaining brown sugar and parmesan cheese.
  • Return filled squash halves to the baking dish and bake for an additional 15 minutes.
